Which type you choose is a personal choice. Many like the body conforming properties of a latex or memory foam mattress while others don't like how it feels at all and prefer the traditional inner spring system.
If your futon will only be used occasionally, perhaps in a guest room or formal living room, the mattress is a place where you can save some money. A simple cotton-filled mattress should suffice. If the futon is meant for daily use, in a den or child's room, you need a high-quality mattress. A coil-filled mattress will hold up to the rigors of daily or nightly use. The costs of the mattresses are directly related to how durable and comfortable they will be.
Don't be shy. Lay down on the mattress for at least 10 minutes - salespeople are used to this and won't mind you doing so; if they object, go buy somewhere else. Also, lie down in your natural sleeping position. Too many people test out a mattress by lying on their back and forget or are too shy to lie on it as they would normally do at home.
